"Pistachio  Pesto                                                                                                                                                                        

2 Cups of packed flat leaf parsley

3/4 Cup pistachios toasted (heat in a heavy bottomed skillet until they are fragrant and lightly toasted - appx. 8 minutes -  let cool)

1 Tablesppon fresh thyme leaves

3 Garlic cloves

3/4 Cup extra virgin olive oil

Salt & freshly ground pepper



Combine the parsely, pistachios, thyme and garlic cloves in the bowl of a food processor and blend until finely chopped.  With the machine running gradually drizle in the olive oil, processing until well blended.  Season the pesto with salt and pepper to taste. 



Great on Grilled Chicken Breasts!
